Budget Friendly Winter Meals The Whole Family Will Love

It’s no secret that the cost of groceries has been steadily climbing.

So, every family is on the hunt for budget friendly winter meals to fill hungry tummies.

We’ve compiled a list of our favourites here:

FAKEAWAYS: FRIED RICE

No need to head to the takeaway shop, you can make a delicious (and huge) portion of fried rice in your own kitchen. Filling and tasty, you can adapt the recipe to suit your family’s taste buds by swapping and changing the meat and veggie inclusions.

Here’s a tasty Chicken and Veggie version from Food in a Minute (you can simply substitute in your own fresh or frozen veggies if you don’t have the suggested bag on hand).

Ingredients

2 eggs, beaten

½ Tbsp sesame oil

200g chicken tenderloins, cut into thin strips

1 clove garlic, finely chopped

2 Spring onions, sliced

1½ cups cooked long grain rice

¼ cup sweet chilli sauce

½ Tbsp soy sauce

1 x 160g bag Wattie’s SteamFresh Sweet Corn, Carrots and Broccoli

chopped coriander leaves (optional)

lime wedges (optional)

Method
Step 1

Heat a dash of oil in a wok or non stick frying pan. Add beaten eggs and cook for 1 minute, stirring until they are softly scrambled. Remove from the pan and set aside.

Step 2

Add the sesame oil to the pan. When heated add chicken and stir fry for 5 minutes, until chicken is coloured. Add garlic and spring onions and continue stir frying until chicken is cooked and onions soft.

Step 3

Add cooked rice, sweet chilli sauce and soy sauce and continue cooking until rice is hot. While the rice is cooking microwave Wattie’s SteamFresh Vege Mixes according to packet instructions.

Step 4

Just before serving toss through the cooked egg and vegetables. Serve immediately garnished with freshly chopped coriander leaves and lime wedges if wished.

Switch It Up
This recipe is great for using up whatever vegetables are left in the fridge. If using fresh vegetables, add them to the pan before adding in the rice.
If you’re using vegetables that take a little longer to cook, blanching them in the microwave can help speed up your dinner.

Pasta bakes are simple, tasty and easy to prepare. They are also warming, filling and affordable. They are another winter meal variety where you can build heaps of different options depending on what you have in the pantry or fridge.

All-in-one Tuscan chicken pasta bake

Tuscan chicken is the dinner trend of the moment and this dish hits all the right notes. Loaded with chicken, pasta, cheese, vegetables and a whole lot of flavour, it’s easy to put together and will satisfy even the hungriest of families. We love it as it’s a great way to use up leftover cooked chicken and make it stretch for another day.

Ingredients

300g dried fusilli (spiral) pasta

– 50g butter

– 1 brown onion, finely chopped

– 3 garlic cloves, crushed

– 2 tbsp plain flour

– 4 fresh thyme sprigs, leaves picked

– 300ml carton cooking cream

– 250ml (1 cup) milk

– 280g jar sun-dried tomato strips, drained

– 150g (1 1/2 cups) shredded cooked chicken

120g packet baby spinach

– 155g (1 1/2 cups) pre-grated pizza cheese

Method

Step 1

Preheat oven to 200C/180C fan forced. Cook the pasta in a large saucepan of salted boiling water following packet directions or until al dente. Reserve 125ml (1/2 cup) cooking liquid. Drain.
Melt butter in pan over medium heat. Add onion and garlic and cook, stirring, for 5 minutes or until softened. Add flour and thyme and stir until combined. Gradually add cream, milk and reserved cooking liquid, stirring constantly, until mixture is smooth and combined. Bring to the boil then cook for 2 minutes or until thickened slightly

Step 3

Add tomato, chicken, spinach, parmesan and 55g (1/2 cup) pizza cheese. Season. Cook, stirring, for 2 minutes or until spinach wilts. Transfer to a 2.5L (10 cup) baking dish. Sprinkle with remaining pizza cheese. Bake for 25 minutes or until golden and heated through. Serve.
